Cranberry and White Chocolate Scones

Scones:
6 cups flour
1 cup sugar
2 tablespoons baking powder
1 1/2 teaspoons salt
3/4 cup chilled unsalted butter
1 1/3 cups dried cranberries
1 1/4 cups white chocolate chips
1 3/4 cups whipping cream
3 eggs
1 tablespoon vanilla
1. Preheat oven to 350 degrees.
2. Sift together flour, sugar, baking powder and salt.
3. Cut in butter with pastry blender until the consistency of dry oatmeal.
4. Add dried cranberries and white chocolate chips.
5. In a medium bowl, combine cream, eggs and vanilla.
6. Add dry ingredients. Stir until dough comes together. If it is dry add slightly more cream, one tablespoon at a time.
7. On a board, knead gently 5 -6 times. Do not overwork.
8. Divide into desired size pans. This amount will fill 3 9-inch pans, cut into 8 wedges and pulled apart slightly.
9. Bake 20 to 30 minutes at 350 degrees.
